The Royal Chef At Home: Easy Seasonal Entertaining

WASABI MASHED POTATOES

NOTE: A little wasabi goes a long way… MAKES 4 PORTIONS

1 teaspoon (or to taste) wasabi paste 1 teaspoon salt

2 pounds russet potatoes, about 4 large potatoes ½ cup heavy cream

1 cup freshly grated Parmesan cheese 4 tablespoons unsalted butter, softened

¼ cup finely sliced green onions

1 Peel the potatoes and cut them into 1-inch chunks. Place into a large pot and cover with cold water. Bring potatoes to a boil and cook until fork tender, 15-20 minutes. Drain the potatoes and return to the pot. Mash with a potato masher until there are no lumps.

2 Add the cream and butter and stir into the potatoes. Stir in the Parmesan cheese, wasabi and salt and adjust the seasoning. Spoon into a serving dish and top with the green onions.
