RUSTIC FIG PROSCIUTTO & GOAT CHEESE PIZZA
MAKES 1 LARGE PIZZA
PIZZA CRUST 1 package fast active dry yeast 1 teaspoon granulated sugar
2 Crumble the goat cheese onto the dough. Top with the red onion, figs and prosciutto. Drizzle the olive oil on top. Bake at 400ºF for 10-12 minutes. 3 Remove from the oven and place the arugula on top of the pizza. Drizzle with the balsamic vinegar and serve. FOR THE TOPPING 1 ½ cups fresh goat cheese ½ red onion, sliced thin 6 ripe fresh figs 8 thin slices prosciutto 2 tablespoons extra virgin olive oil 2 cups baby arugula cup balsamic vinegar reduced to a tablespoon
1 cup warm water 3 cups bread flour ½ teaspoon salt 2 tablespoons olive oil
1 Prepare the pizza dough. Dissolve the yeast and sugar in lukewarm water. Add the flour, salt and oil and mix together to form a dough. Place somewhere warm, covered until the dough has doubled in size. Knock the dough back again and knead into a pliable ball. Roll out the dough to make one large 12” round pizza.
