OVEN BAKED BABY BACK RIBS

MAKES 4 PORTIONS

1 tablespoon coarse salt 1 tablespoon dried oregano 2 teaspoons black pepper 1 cup apple juice

2 racks baby back ribs, about 2 pounds each 2 tablespoons Instant espresso powder 1 cup brown sugar 2 tablespoons Chipotle chili powder 1 tablespoon cocoa powder

1 Preheat the oven to 300ºF.

3 Place the ribs on a large, foil-lined baking sheet and coat with the rub front and back. Bake the ribs in the oven (uncovered) for about 2 hours. 4 Remove from the oven and turn the ribs onto the other side, cover with the apple juice and cover with aluminum foil. Cook for another hour until the ribs are fork tender and pull apart from the bone.

2 Remove the silvery membrane from the concave back of the ribs by pulling carefully with paper towel or ask your butcher to do it before you purchase the ribs. Mix together the espresso powder, brown sugar, chili powder, cocoa powder, salt, oregano and black pepper.
