CHILI & GARLIC CHICKEN SKEWERS WITH GRILLED VEGETABLE QUINOA

THIS IS REALLY A FULL MEAL, WITH PROTEIN, HEALTHY CARBS AND FRESH VEGETABLES. You can easily double or triple the recipe. MAKES 4 PORTIONS

Salt and pepper

1 cup quinoa 2 cups water ½medium red onion, peeled and sliced, root on 1 red bell pepper, seeds removed and sliced long-ways 1 zucchini, top and tailed and sliced long-ways into three 2 sticks celery, cut into half, long-ways ½ head fennel, sliced ½ inch thick ¼ cup extra virgin olive oil

1 pound boneless, skinless chicken breast or thighs, cut into 16 small chunks

¼ cup white balsamic vinegar ¼ cup extra virgin olive oil 1 teaspoon Dijon mustard 1 teaspoon granulated sugar Salt and pepper ¼ cup finely chopped green onions

16 baby mushrooms 16 cherry tomatoes

1 teaspoon chili and garlic sauce 1 teaspoon Chinese five spice powder 1 tablespoon extra virgin olive oil 1 lime, juice and zest ¼ cup chopped fresh cilantro 4 twelve inch skewers

1 In a large bowl add the chili and garlic sauce, five spice, olive oil, lime juice and zest. Stir in the chicken and marinade for at least 10 minutes. Thread 4 pieces of chicken with four mushrooms and four cherry tomatoes onto each skewer, place on a clean plate and refrigerate. 2 In a large pan add the quinoa and cold water and bring to the boil over high heat, reduce to a simmer and cover with a lid. Cook until the liquid has all absorbed. Remove from the heat, remove the lid and allow to cool.

3 Heat the grill to medium high and brush the vegetables with the olive oil. Sprinkle with the salt and cook on the grill for about 6 minutes or until soft. Remove to a cutting board and chop into bite size pieces. Place the skewers on the grill and cook for 2 minutes per side. 4 Blend the vinegar, olive oil, sugar, salt and pepper and mustard until combined. Stir the dressing into the quinoa, season with salt and pepper and add the vegetables. Sprinkle the green onions over the top of the quinoa. Lay the cooked chicken skewers on top of the quinoa.
