SWEET COLESLAW

ONE THING I LEARNT WHEN MAKING COLESLAW IN TEXAS IS THAT THE SOUTHERNERS REALLY DO LIKE IT SWEET. Don’t skimp on the sugar; in fact add a little more if you want to! MAKES 4 PORTIONS

¾ cup granulated sugar ¼ teaspoon celery seeds ¼ cup apple cider vinegar ¼ teaspoon salt 1 teaspoon black pepper

1 pound green cabbage, finely shredded 4 carrots, grated 1 medium sweet yellow onion, chopped

1 cup mayonnaise ¼ cup buttermilk ¼ cup Creole mustard

1 Add the cabbage, carrots and onion to a large bowl. In a separate bowl, whisk together the mayonnaise, buttermilk, mustard, sugar, celery seeds and vinegar and season with salt

and pepper. Stir the mayonnaise mix into the cabbage, onions and carrots and massage in. Refrigerate for at least an hour—overnight is even better.
