The Royal Chef At Home: Easy Seasonal Entertaining

T his simple meal includes some of my favorite dishes, especially the fork tender braised beef short ribs. They are just what you want to eat during the cold winter months, especially paired with a kale and goat cheese mash which makes for a very comfort food combination. Best of all the whole dinner can be assembled in advance. That’s important for me when I have friends over. We all want to spend as much time as possible together, relaxing and having fun. The ribs braise slowly in the oven and the kale and goat cheese mash can be made ahead of time and just re-warmed for dinner. All of the components of the salad can prepared ahead and put in ziplock bags and then assembled at the last minute, with a drizzle of dressing just before serving. Even the fallen soufflés are done and awaiting just a last minute touch. A SUNDAY BRAISE WITH FRIENDS
