F ull disclosure: I really don’t know all that much about American football. I am, however, a committed “football” fan of another sort—soccer. Unfortunately that doesn’t wash here in Texas. Grown men in white shorts kicking a ball does not, to most of my neighbors, a real sport make. No matter. I’ve decided to remain both a staunch year round (English) football fan and a once a year screaming lunatic when the Super bowl is on. But while British soccer food is simply a hot savory pie and cup of Bovril at half time, Super Bowl is a day devoted to armchair refereeing, drinking beer and inhaling calories like a defensive lineman. An almost perfect holiday! The lineup (no pun intended) for the following menu is simple. To be appropriately competitive, there are mac and cheese balls with the addition of a bit of lobster. Then a fresh, citrusy ceviche that makes great use of all those tortilla chips on sale at the supermarket. Finally a meatball, that everyday ode to spherical perfection, simmered in a lovely, smoky paprika sauce that begs for a cold beer. Of course should the worst happen, I’ve also included a delicious chocolate bread pudding to lessen the bitter taste of defeat. Not to worry. There is always next year. Go Cowboys!
