STIR-FRIED SHREDDED BEET & CHARD LEAVES
I REMEMBER MY GRANDAD COMING IN FROM HIS ALLOTMENT WITH BUNCHES OF PLUMP BEETS COVERED IN THICK SOIL. He would cut off the leaves, throw them away and wash the bulbs of beet (root) in the kitchen sink. I wish he was around today to show him how good those leaves are when washed, shredded and sautéed. Adding the chard balances the sweet beet leaves with a little bitterness creating a healthy vegetable dish. MAKES 4 PORTIONS
Salt and pepper to taste ¼ cup golden raisins
¼ cup olive oil 1 clove garlic, minced 8 cups chard leaves washed and shredded 8 cups fresh beet leaves washed and shredded
¼ cup pine nuts, lightly toasted 1 teaspoon apple cider vinegar
1 In a large skillet over medium heat add the oil and garlic and stir. Add the greens and a little salt and pepper and stir until they start to wilt but are still crunchy.
2 Stir in the raisins and apple cider vinegar, adjust the seasoning with salt and pepper and spoon into a serving dish. Garnish with the pine nuts.
