“FOOLPROOF” BASMATI RICE

I CALL THIS MY FOOLPROOF RICE RECIPE BECAUSE IT WORKS EVERY TIME AND MAKES THE FLUFFIEST RICE EVER. Don’t be tempted to lift the lid before the 18 minutes is up. MAKES 4 PORTIONS

½ cup sliced almonds 1 tablespoon butter 2 tablespoons cilantro, chopped

1 tablespoon olive oil 1 cup basmati rice 2 cups chicken broth ½ onion, nely diced

1 In a small saucepan bring the chicken broth to a boil. In a separate heavy based pan heat the olive oil and add the onion, sauté until it starts to soften and then stir in the rice. Add the chicken broth and stir. Bring the rice to a boil and reduce to a simmer. Place a lid on top and cook for 18 minutes or until all of the liquid has evaporated.

2 Remove the rice from the pan into a large bowl and fluff up the grains with a fork and adjust the seasoning. 3 In a frying pan melt the butter and add the almonds, cook until golden brown and pour over the rice. Garnish with the chopped cilantro.
