MACADAMIA BUTTERSCOTCH BARS
A TYPICAL TEA MENU COMBINES BOTH SAVORY AND SWEET DISHES AND WHILE I LIKE CHOCOLATE (A LOT) I’M NOT ALWAYS CONVINCED THAT IT GOES WELL WITH A NICE POT OF ENGLISH BREAKFAST TEA OR EARL GREY. By contrast, these macadamia bar cookies combining nuts, brown sugar and butterscotch complement a well brewed cup beautifully. MAKES 12 GOOD SIZE BAR COOKIES
1 ½ cups flour 1 teaspoon baking powder 1 pinch salt 1 cup chopped macadamia nuts 1 cup butterscotch chips
1 ½ sticks unsalted butter 1 cup brown sugar cup granulated sugar 2 eggs 1 ½ teaspoon maple syrup
1 Preheat the oven to 350ºF. Grease an 11x9 inch baking sheet. 2 Cream the butter and both sugars in a mixer until pale and fluffy. Add the eggs and maple syrup and beat until combined.
3 Fold in the flour, baking powder and salt followed by the nuts and butterscotch chips and spread into the prepared baking sheet. 4 Bake for about 30-40 minutes until golden brown. Allow to cool before slicing into bars.
