CHEESE BISCUITS

THESE BISCUITS ARE EASY TO MAKE AND VERY EASY TO EAT. For the flakiest biscuits, make sure you don't overwork the dough. MAKES 8 BISCUITS

1 teaspoon sugar 3 cup butter (6 ounces) ½ cup crumbled Stilton cheese ¼ cup chopped walnuts 1 cup buttermilk

3 cups all purpose flour 1 1 tablespoons baking powder 1 teaspoon soda ¼ teaspoon celery seeds 1 teaspoon salt

1 Preheat the oven to 400ºF.

3 Roll out to about 1-inch thick and cut into 2 ½-inch rounds using a biscuit cutter. Place on a baking sheet and bake in the center of the oven until brown, about 15 minutes. Remove from the oven and cool slightly before serving.

2 In a large bowl add the flour, baking powder, soda, celery seeds, salt and sugar and stir together. Rub in the butter to make fine crumbs and then add the stilton and walnuts. Stir in the buttermilk to make a shaggy ball of dough.
