The Royal Chef At Home: Easy Seasonal Entertaining
H omemade soup makes you feel good all over, especially when it’s slowly simmered and carefully tended. Add to that the fact that it is healthy and delicious and it’s no wonder that people feel quite pampered when you set a large steaming bowl of soup in front of them. Best of all is that soup is so flexible that I use recipes more as guidelines than as hard and fast rules. I encourage you to do the same. If you see a recipe for black bean soup, think of it as “any bean” soup. Or a recipe for cream of asparagus soup can become “cream of any green” soup. Use what you have and what you love. That always works. I’ve included three of our family favorites here along with a recipe for cheese biscuits to go along. If time is tight, you can always just pick up a baguette from your local bakery and a package of Irish butter. Best of all, these recipes make enough soup so that you are bound to have leftovers for a quick evening meal or weekday lunch. A POT OF SOUP, A LOAF OF BREAD
