BLUE CHEESE SHORTBREAD CANAPÉS WITH GOAT CHEESE & FIGS
THE SHORTBREADS CAN BE MADE IN ADVANCE, COOLED COMPLETELY AND THEN FROZEN. Just thaw, top and serve. MAKES ABOUT 30 CANAPÉS
½ cup soft goat cheese 4 fresh ripe gs cut into small wedges
½ cup butter, at room temperature 1 cup crumbled blue cheese
1 cup all-purpose our Pinch of cayenne pepper Pinch of salt
1 In a food processor add the butter, blue cheese, flour, cayenne and salt and pulse until blended. Shape into a log, wrap in parchment or plastic wrap and refrigerate until firm or freeze for up to 3 months. 2 To bake, slice 1-inch thick and bake on an ungreased baking sheet at 350°F for 10 minutes, or until pale golden around the edges.
3 Allow the shortbread to cool and top with a little goat cheese and a piece of fig.
